    Note: I use less dill & parsley than called for.

    Toss 1 cup each diced cucumber, tomato, green pepper (or yellow pepper) and scallions with 3 T. chopped dill, 2 T chopped parley, the juice of 1 lemon & 1/4 cup good olive oil in a large bowl. Season with salt.
