LESTER'S DINER GREEK SALAD DRESSING

Recipe Introduction
This salad dressing is also good with plain mixed salad greens. It is made with very little oil - the taste is pleasurable & refreshing. Sugar adds swwetness. With an abundance of diced pimentos, onions & minced garlic & fragrant oregano, this dressing is one you will want to have on hand. The only change we made from the original recipe is to substitute Egg Beaters for the small amount of raw whole eggs. Makes 5 cups.
List of Ingredients
1 T. egg substitute (we used Egg Beaters)
1 T. fresh lemon juice
3 T. sugar
1 T. salt, or to taste
1 C. apple cider vinegar
1 C. white wine vinegar
1 C. water
1/3 C. olive oil
1 Cup plus 3 tablespoons vegetable oil (we used canola oil)
1/2 C. diced pimentos
1-1/2 medium yellow onions, diced
1/4 C minced garlic (the restaurant suggests using already minced garlic available in most supermarkets)
1/3 C. dreid oregano leaves, lightly crushed in a mortar with pestal
Recipe
In a large mixing bowl, whisk egg substitute with lemon juice, sugar and salt. Whisk in cider vinegar, then white wine vinegar and water. (Or you can also use an electric mixer on medium speed.) Whisk olive oil and vegetable oil together and slowly whisk or beat into vinegar mixture. Stir in remaining ingredients and mix well. Refrigerate until ready to use. Whisk or stir well before using. Makes about 5 cups.
