    Marinated Vegetable Salad

    Recipe Introduction

    With its slightly sweet dressing this salad is a great way to get kids to eat their vegetables. It's also a versatile side dish tat works with almost any entree.

    List of Ingredients

    3/4 Cup white vinegar
    1/2 Cup vegetable oil
    1 Cup sugar
    1 tsp. salt
    1 tsp. pepper
    2 (11-oz.) cans white corn, drained
    1 (15-oz.) can small sweet green peas, drained
    1 (14 1/2-oz.) can French-style green beans, drained
    1 green bell pepper, chopped
    1 Cup diced celery
    1 medium onion, chopped
    1 (2-oz.) jar diced pimiento, thoroughly drained
    Garnish: celery leaves

    Recipe

    Bring first 5 ingred. to a boil in a small saucepan over medium-high heat, stirring until sugar dissolves completely. Cool.
    Combine corn & next 6 ingred. in a bowl; stir in vinegar mixture. Cover and chill 8 hours; drain. Garnish salad with celery leaves, if desired. Yield: 10-12 servings
