Pebbles' Zucchini Sour Cream Dressing
Source of Recipe
Pebbles Restaurant; Longwood, Winterpark, Orlando, Lake Buena Vista
Recipe Introduction
I got the recipe out of a cookbook I picked up at the library a long time ago - it was either a book of food editor's favorite recipes, or of favorite Florida restaurant recipes.
Recipe notation: The following dressing holds the record for the most requested recipe in the history of my "Thought You'd Never Ask" column.
List of Ingredients
2 eggs
4 cups salad oil
1 cup red-wine vinegar
1/4 cup lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh garlic
Pepper (about 2 turns of the mill)
1 tablespoon grated Asiago cheese (fresh Parmesan may be substituted)
1 teaspoon salt
2 tablespoons sour cream
1 large zucchini, grated
Louisiana pepper sauce to taste
Recipe
To make mayonnaise, put eggs, red vinegar in a food processor; blend until mixture doubles in volume, bout 1 minute. With the machine running, pour oil in a thin, steady stream until mixture thickens.
Scrape into another bowl and, in the order listed above, blending balance of ingredients. Adjust seasonings.
Makes about 1 quart; refrigerate well.
