    The classic salad is loaded with flavor, and it comes together with ease. Serve it with the Garlicky Shrimp (see recipe).

    Makes: 2 servings

    Total time: 15 minutes

    List of Ingredients




    1 Tbsp. lemon juice
    1 Tbsp. shredded Parmesan
    1⁄2 tsp. minced garlic
    1⁄4 tsp. anchovy paste
    1⁄4 tsp. Dijon mustard
    Salt and pepper to taste
    4 tsp. extra-virgin olive oil
    4 cups chopped romaine
    1⁄2 cup whole-wheat bread cubes, toasted

    Recipe



    Whisk together lemon juice, Parmesan, garlic, anchovy, Dijon, salt, and pepper. Whisk in oil until thoroughly combined.

    Toss dressing with romaine and toasted bread cubes.
