This quick-to-prepare salad gets hearty flavor from the turkey and a crunch from the apples and walnuts.
List of Ingredients
1 green apple, peeled, cored, and cubed
1 Tbsp. lemon juice
2 cups cubed or shredded cooked turkey
1 cup finely chopped celery
½ cup coarsely chopped walnuts
Salt and pepper
½ cup light mayonnaise dressing
¼ tsp. snipped fresh tarragon
1-2 tsp. honey
Butterhead lettuce
Snipped fresh tarragon (optional)
Recipe
In a large mixing bowl combine apple cubes and lemon juice; toss to coat. Add turkey, celery, and walnuts; season with salt and pepper.
In a small bowl, mix the mayonnaise, the ¼ teaspoon tarragon, and the honey together until smooth; add to the turkey mixture and toss to combine.
Serve on a bed of lettuce. Garnish with additional snipped tarragon, if desired. Makes 4 servings.
