Years ago, my mother made a hot salad with hard-boiled eggs, bacon and lettuce with some sort of vinegar dressing. I would love to have the recipe to pass on to my children:
An easy and delicious warm salad, especially nice during the cooler months
1 medium head iceberg lettuce, shredded (about 10 cups)
2 teaspoons brown sugar (can use white)
2 scallions, white part
and some green, thinly sliced
6 slices lean bacon
¼ cup vinegar
2 tablespoons water
2 hard-cooked eggs, peeled and coarsely chopped
Recipe
In a large bowl, place the lettuce, sugar and scallions; toss. Set aside.
In a nonreactive skillet, fry the bacon over medium heat until crisp. Remove from pan and cool on paper towels. Crumble and set aside. Reserve about 1 tablespoon bacon drippings in the skillet; discard the rest or save for another purpose.
To the drippings in the skillet over medium heat, add the vinegar and water, stirring. Bring to a boil and then pour over the lettuce mixture; toss quickly to wilt the lettuce. Add the bacon and toss again. Garnish with the hard-cooked eggs. Makes 4 servings.
