    1 pork tenderloin, weighing about 1 pound
    1 cup buttermilk
    1 egg
    Salt and pepper to taste
    About 1 ¼ cups cracker meal (if unavailable, process unsalted saltines in a blender or food processor)
    Vegetable oil for deep frying
    4 kaiser rolls
    Dill pickles



    Recipe



    Trim the tenderloin of any fat or silverskin, then butterfly it lengthwise, leaving about ½ inch of meat unsplit. Pound with a meat mallet until it is about ¼-inch thick. Then divide the meat into 4 portions.

    Beat the buttermilk, egg and salt and pepper together, then place in a zippered plastic bag with the prepared meat slices and marinate 4 hours or overnight.

    Discard the marinade. Press the cracker meal onto both sides of the marinated meat. Heat vegetable oil about 1 inch deep to 360 degrees. Slide the pork tenderloin into the oil and fry until golden crisp, turning once, about a total of 4 minutes.

    Drain on paper towels. Serve on kaiser rolls with dill pickles and condiments of choice. Makes 4 servings.
