    Q. Would you please print the recipe for the Homemade Ketchup at Lucille's American Cafe in Weston? It is unique and a very refreshing change of pace from the too-common Heinz variety. - John Perkins, Weston

    A. Co-owners Paul and Beth Nunez of Lucille's American Cafe, 2250 Weston Road, Weston, 954-384-9007, are happy to share their unique ketchup recipe. Beth says that a favorite way to enjoy this delicious condiment is as a dip with hand-sliced potato chips. Of course, you can also use it any way you might use Heinz.

    Once you realize how easy Lucille's Homemade Ketchup is to make, store-bought will be obsolete. We tried it with a variety of chips, from Pringles to store-bought pita and tortilla chips. Our tasters enthused about all of them scooped high with Homemade Ketchup. We also served it with our vegetarian (Boca) burgers and as a sauce for baked chicken breasts. You will find other ways to enjoy this unique condiment.

    From an appetizer dip for chips to a delicious sauce for burgers or chicken, this unique ketchup will quickly become a household favorite.

    List of Ingredients




    1 (28-ounce) can tomato puree (we used the Dei Fratelli brand)

    1/3 cup apple cider vinegar

    2/3 cup sugar

    1 whole clove

    1 large bay leaf

    1/2 teaspoon ground coriander

    1/4 large cinnamon stick

    3/4 teaspoon dry mustard

    2 medium garlic cloves, minced

    1/2 teaspoon salt or to taste

    1/4 teaspoon fresh-ground black pepper, or to taste

    1/8 teaspoon cayenne pepper, or to taste

    In a nonreactive large heavy saucepan, combine all the ingredients well. Bring to a simmer over medium heat, stirring occasionally. When the mixture begins to simmer, adjust the heat to keep the simmer at a steady bubble. (Make sure your saucepan is deep or you will have tomato sauce spattering all over your stove. We partially covered the pan.)

    Continue simmering the mixture 40 to 45 minutes, stirring occasionally, or until it has reduced slightly and thickened to a dipping consistency. Cool to room temperature, transfer to covered containers and refrigerate. You may want to remove the cinnamon stick and bay leaf before serving. Makes about 3 cups.
