1 pint fresh blueberries
½ C. egg whites
2 C. sugar
Recipe
Pick over the blueberries to eliminate any stems or bruised berries. Beat the egg whites with a wire whisk just enough to break them up. Place the sugar in a separate bowl. Toss the blueberries with the egg whites to coat them completely & then drain them in a wire strainer. The berries should be lightly coated, shiny & wet looking. While the berries are still wet, toss them (five or six at a time) in the sugar. Place the sugared berries, not touching, on a parchment-lined sheet pan. Let the berries dry overnight in a cool, dry room. Makes 2 cups.
