While many recipes call for boiled shrimp, it's always a mistake to use boiling water: it makes the shrimp tough.
Even poaching can ruin the texture. Here's the simplest & surest way to cook shrimp: Boil water with a slice of lemon for extra flavor. Remove the pan from the heat, immerse the shrimp, cover the pan & let it sit about 5 minutes. Rinse the shrimp under cold water immediately to stop the cooking.
