Creamed New Potatoes

Use either red-skinned or white potatoes.
List of Ingredients
2 pounds new potatoes, cleaned
1 tsp. salt
1/2 cup milk
1/2 stick butter, cut into pieces
2 tsp. flour, mixed with a little water to make a paste
1/2 tsp. black pepper
Recipe
Put the potatoes in a pot of cold water with the salt & boil gently until tender, approx. 15 min. Drain. Add the milk & butter. Let come to a boil over medium heat. Slowly add the flour paste, a bit at a time, and stir using only as much paste as necessary to make the cooking liquid creamy. Sprinkle with the black pepper. Cover & let simmer for 5 minutes. Serves 6.
