Recipe Introduction
This recipe is a family favorite. It is excellent with prime rib or filet mignon. Everyone who tastes it asks for the recipe. This recipe circulated in my neighborhood for many years. Make it the day before, and heat in the oven the day the day of the dinner.
Note: Use purchased croutons or make your own & add a little fresh thyme.

5 tablespoons butter
8 onions, sliced (4 cups)
2 tablespoons flour
Fresh-ground black pepper
1 (14-ounce) can beef broth (not low sodium)
2 tablespoons dry sherry
Salt, to taste
1 teaspoon fresh thyme leaves
21/2 cups cubed day-old bread
1 (5-ounce) package grated Swiss cheese
3 tablespoons grated parmesan cheese
Recipe
In a skillet over medium heat, melt 3 tablespoons butter. Add onions and cook 5 minutes until tender. Add flour and pepper and stir to combine. Add broth and sherry and cook and stir until thick and bubbly. Add salt and thyme.
Turn into an 8-by-8-inch baking dish. Toss bread cubes with 2 tablespoons melted butter and spoon over onion mixture. Sprinkle with Swiss and parmesan cheeses. Bake at 350 degrees 30 minutes until bread cubes are golden and cheese melts. Makes 9 servings.
