    Green Beans in Tomato Sauce

    2 garlic cloves, finely chopped
    1/4 C. olive oil
    1-1/2 C. canned Italian peeled tomatoes, with their juice
    1 lb. fresh green beans, trimmed
    salt & freshly ground black pepper
    1/2 C. fresh basil leaves

    Recipe



    In a large skillet, cook the garlic in the olive oil over medium heat until lightly golden, about 2 minutes (be careful not to burn). Add the tomatoes & chop them coarsely with the side of a spooon. Bring to a simmer & cook 5 minutes.

    Add the green beans & salt & pepper to taste. Cover the pan & cook, stirring occasionally until the beans are tender, about 8 minutes. Stir in the basil.

    Transfer the beans & sauce to a serving bowl. Or, if there is a lot of liquid left in the pan, remove the beans to a serving bowl, raise the heat & boil the sauce until thickened. Pour the sauce over the beans & serve.
