    Makes 12 servings

    List of Ingredients




    1 2-lb. bag package frozen hash browns (plain)
    1 (8-ounce) container sour cream
    1 (10 1/2-ounce) can condensed cream of chicken (or celery) soup
    2 cups shredded sharp cheddar cheese (or Colby)
    1/2 cup chopped onion
    1 tsp. salt
    1/2 tsp. pepper
    1 stick (1/2 cup) butter, melted + 2 Tablespoons
    3 cups cornflakes or plain potato chips


    Recipe



    Preheat oven to 350 degrees. Spray a 9-by-13-inch baking pan with cooking spray.

    Place frozen potatoes in a large bowl; melt butter & pour over potatoes; stir to blend. In a separate medium-sized bowl, sour cream, soup, cheese, onion, salt & pepper; stir in cheese. Toss potatoes with sour cream mixture. Spread in pan. Cook for 45 minutes. Melt reserved butter and combine with cornflakes; spread over casserole. Return to oven and cook an additional 15 minutes, until topping is lightly browned.


    ***NOTE: I usually just crumble potato chips over the top - no butter - when I first place casserole in the oven & bake 1 hr.
