Make-Ahead Mashed Potatoes
great for the holidays
List of Ingredients
5 lbs. potatoes, peeled & quartered (I use baking potatoes)
2 (3-oz.) pkgs. cream cheese, softened
1 cup sour cream
2 tsp. onion salt
2 tsp. salt
1/2 tsp. fresh-ground black pepper
1 egg
2 T. butter or margarineRecipe
Place potatoes in a large pot & add enough cold water to more than cover them. Bring water to a boil over high heat. Reduce heat to medium-high & cook potatoes until done, about 25 minutes.
In a large glass mixing bowl, mash the potatoes until there are no lumps. Add the rest of ingred. except butter. Mix again & let cool. Put in greased 9x13" casserole. Dot with butter. Cook at 350° for 40 minutes or until heated through. Can be prepared a day ahead & refrigerated (covered) until ready to bake. Serves 12.
