    If you've never tasted a roasted green bean, you're in for a big treat. Don't shy away from the anchovies; if they usually taste too fishy for you, just soak them in milk for about 20 minutes to tame them. This is one of those astound-your-guests recipes; everyone who tastes them will be amazed by the beans & they won't guess the secret ingredient. Food & Wine named this recipe one of the best they've published in the last decade!

    List of Ingredients




    1 pound green beans, trimmed
    1/4 cup extra-virgin olive oil
    3 garlic cloves, smashed
    3 fresh thyme springs, halved
    salt & pepper to taste
    3 anchovy fillets, mashed
    finely grated zest of 1 lemon
    2-3 teaspoons fresh lemon juice

    Recipe



    Preheat the overn to 450°F and set a rack on the upper level.

    Toss the beans with the oil, garlic & thyme in a large baking dish; season with salt & pepper. Spread the beans out in a single layer & roast, tossing occasionally, until tender & lightly browned, about 5 minutes.

    Discard the thyme springs & transfer the beans to a bowl. Add the anchovies, lemon zest & lemon juice and toss well to coat. Serve warm or at room temperature.
