4 pounds whole already baked potatoes, peeled and grated
1 ½ cups minced shallots
3 cups grated white cheddar cheese
3 cups sour cream
1 tablespoon plus 1 teaspoon fine salt
¼ teaspoon ground white pepper

Grease well a 9-by-13-inch baking pan. Preheat a 350-degree oven.
Mix the potatoes, shallots and 2 cups grated cheese in a large mixing bowl until well mixed. Season with salt and pepper. Fold in the sour cream, 1 cup at a time.
Place in prepared pan and sprinkle with remaining cheese. Bake 55 minutes until hot and browned. Makes 12 to 15 servings.
