    These are good for holiday meals!
    Before serving, you can sprinkle with a chopped fresh herb, like mint, thyme, or parsley, if desired.

    List of Ingredients




    1 C. chicken broth (canned is fine)
    two 10-oz. pkg. frozen peas or 3 cups fresh peas
    3 cups fresh peas
    1 T. unsalted butter, softened

    Recipe



    Heat the chicken broth in a large saucepan over mediumheat. Drop in the peas & simmer until barely tender.

    Drain & cover to keep warm.

    Add the butter; stir to melt & serve immediately.


    NOTE: If you are using frozen peas, an hour before you are going to eat, heat the chicken broth, drop in the peas, and remove the pan from the heat. Cover. When you are ready to eat, they will be ready, no cooking is necessary. Drain whatever broth is there & add the butter and garnish.
