2 tablespoons cornstarch
1/2 cup water
3/4 cup heavy cream, whipped
1 tablespoon butter or oleo
1 tablespoon sifted powdered sugar
1 9-inch pie shell, baked
Recipe
Place berries in colander and rinse with running cold water. Drain and remove green tops and stems. Take 1-1/2 cups of berries and mash with potato masher.
Combine sugar and cornstarch. Add crushed berries and water. Cook over medium heat, stirring constantly until mixture comes to a boil. Continue cooking and stirring over low heat 2 minutes. The mixture will be thickened and translucent.
Remove from heat and stir in butter or oleo and cool. Reserve 6 whole berries for garnish and cut remaining berries in half. Place them in the pie shell. Pour cooked mixture over berries and chill 2 hours. Serve topped with lightly sweetened cream. Garnish with whole berries.
