25 mL vegetable oil 2 tbs
1 medium onion, chopped 1
1 medium sweet green pepper, chopped 1
1 can (540 mL/19 oz.) Mexican spice stewed tomatoes 1
250 mL chicken broth 1 cup
5 mL chili powder 1 tsp
1 can (398 mL/14 oz) red kidney beans (undrained) 1
1 can (341 mL/12 oz) corn (undrained) 1
Recipe
In a large saucepan, heat oil over medium heat; sautéé onion and green pepper for 3 minutes. Stir in tomatoes, chicken broth and chili powder; bring to boil. Reduce heat, cover and simmer for 5 minutes. Add undrained kidney beans and corn; cook, covered, 5 minutes longer, stirring occasionally. Serve with shredded part-skim Cheddar cheese accompanied with Tortilla chips. Makes 6 servings.
