Appropriate Fish For Grilling Whole:

� Bluefish

An oiled wire grill basket is a perfect tool for grilling whole fish, but firm fish like salmon, tuna and swordfish can be cooked directly on the grill, if handled carefully. Remember: flip the fish just once and you should be set.
List of Ingredients
1 x 2 lb Striped Sea Bass
1 lemon, cut into thin slices
1 handful of fresh oregano, rinsed
1 handful of fresh thyme, rinsed
1 handful of fresh rosemary, rinsed
Olive oil for brushing fish and oiling grill and grill basket
Salt and freshly ground pepper
Recipe
1. Rinse the fish inside and out, then pat dry. Season the body cavity with salt and pepper.
2. Place a layer of lemon slices and the fresh herbs inside the body cavity of the fish.
3. Close the body cavity and tie it up with butchers twine.
4. Score 3 diagonal cuts on both sides of the fish with a knife. Then brush with oil and season with salt and pepper.
5. Lightly oil a clean grill basket and the grill with to prevent sticking.
6. Heat the grill to a high heat and then turn it down to medium heat just before you're ready to put the fish on.
7. Place the fish into the grill basket and put it on the hot grill. Immediately turn the grill down to medium heat.
8. After approximately 10-15 minutes of grilling on one side, turn the fish basket over and grill for another 10-15 minutes. Cook it until the fish is about to flake but still offers some resistance to a fork or until it is opaque all the way through. Or use other Checking For Doneness Tips.
9. Remove from the grill, cut to remove the bones, serve and enjoy.
