Avocado and Prawn Kebabs (vego one too)

Recipe Introduction
Makes 16 which serves 4-8 depending how greedy they are (lol)
This is best served with paprika moyonnaise (see recipe on my site)
List of Ingredients
- 2 avocadoes skin and seed removed
- 350g cooked and peeled prawns
- 8 halved bamboo skewers
- lime/lemon wedges or slices to decorate
- 1/4 cup lime/lemon juice
- 2 tsp honey
- 1 tsp cajun spice mix
- 2 tsp sesame oil
- 2 tsp peanut oil
- 2 chopped garlic cloves
- 2-3 tsp finely sliced green chilli
Instructions
- Place juice, oils, honey, spices, garlic and chilli in a small bowl and whisk well (with a fork is fine)
- Cut avocado in half lengthways and then crossways into 1 1/2 cm thick slices.
- Thread prawns and avocado onto skewers and arrange on serving plates. Drizzle over marinade and serve with paprika mayonnaise.
Final Comments
Vegetarian option- replace prawns with bocconcini "cherries" you have halved or whole cherry tomatoes.
