makes about 1 cup. The jars are expensive, I tend to get 1-3 eggplants (depending on size) slice them and grill or deepfry them. If I want more acid in the flavour I add balsamic vinegar
List of Ingredients
- 290g jar marinated egg[lants (or see above)
- 1/ 3 cup tahini (sesame paste)
- 2 tbs lemon juice
- 2 cloved garlic (optional)
Instructions
- Process until smooth and serve.
