    List of Ingredients


    • 500g coliban potatoes, peeled and cut into pieces
    • 10 (yes TEN) cloves garlic, peeled and crushed
    • 1 tbs salt
    • 1 cup olive oil (a good extra virgin one)
    • 50ml white vinegar


    Instructions


    1. Place potatoes in saucepan, cover with water and cook until tender. Drain and mash.
    2. Process with garlic, salt and vinegar. Beat well. Slowly add olive oil, and continue beating until well mixed.


    Final Comments


    Garnish with rosemary. Serve with grissini or crusty bread and fetta cheese and black olives
