    serve with a bubbly champagne style wine. Fruit is also a good thing to have here: mango or grapes


    List of Ingredients


    • 16 large green king prawns, peeled and deveined
    • 16 bamboo skewers soaked in water at least 30 minutes (or use metal)
    • 8-16 slices prociutto
    • 4 medium garlic cloves
    • 1/2 tsp sea salt
    • 2 egg yolks
    • 1/2 cup blanched and well drained rocket (arugula)
    • 125ml olive oil (a good one) or use macadamia oil
    • 1 tsp lemon juice


    Instructions


    1. Thread prawns onto skewer, starting from the tail. Roll each prawn in prociutto and store on cling wrap covered plate in the refrigerator.
    2. In a blender pulse garlic, salt, egg yolks and rocket for 30 seconds. Slowly pour in oil.
    3. Place aioli in small bowl and stir in the lemon juice.
    4. Cook prawns on medium hot flat plate until top of prawns is white. Serve with a dipping bowl of aioli
