Prociutto Wrapped Prawns w rocket aioli

serve with a bubbly champagne style wine. Fruit is also a good thing to have here: mango or grapes
List of Ingredients
- 16 large green king prawns, peeled and deveined
- 16 bamboo skewers soaked in water at least 30 minutes (or use metal)
- 8-16 slices prociutto
- 4 medium garlic cloves
- 1/2 tsp sea salt
- 2 egg yolks
- 1/2 cup blanched and well drained rocket (arugula)
- 125ml olive oil (a good one) or use macadamia oil
- 1 tsp lemon juice
Instructions
- Thread prawns onto skewer, starting from the tail. Roll each prawn in prociutto and store on cling wrap covered plate in the refrigerator.
- In a blender pulse garlic, salt, egg yolks and rocket for 30 seconds. Slowly pour in oil.
- Place aioli in small bowl and stir in the lemon juice.
- Cook prawns on medium hot flat plate until top of prawns is white. Serve with a dipping bowl of aioli
