White bean Dip

List of Ingredients
- 300g cooked or canned cannelini beans
- 2 tbs chopped parsley
- 1 tbs olive oil (a good one as you will taste it) + 1tsp extra
- salt and pepper
- 1 small red onion, chopped
- 2 cloves garlic, chopped
- juice of 1/2 lemon
Instructions
- In food processor process beans, onion and garlic until smooth. Add parsley. oil and lemon juice. Process about 10 seconds until well combined. Season to taste.
- Spoon into serving bowls. Cover and refrigerate until ready to serve. Just before serving drizzle with extra virgin olive oil (if you like)
