    List of Ingredients


    • 4-8 pork steaks (loin, midloin, rump or scotch) or pork cutlets or chops
    • 80g dried apricots, sliced or chopped
    • 4 tbs wholegrain mustard
    • 1 cup water
    • 1 tbs honey


    Instructions


    1. Make apricot mustard by combining apricots, mustard, honey and water. Simmer 1-2 minutes on stove and set aside.
    2. Brush both sides of pork with oil, season with salt and pepper. Preheat barbecue.
    3. Grill pork 3-4 minutes each side until the juices are just pink or clear.
    4. Rest a few minutes and serve pork with the apricot mustard and a crisp garden salad.


    Final Comments


    You could use apricot mustard with chicken or tofu if you wanted
