    Barbecue Pork Mini Kebabs

    You can use mushrooms, cherry tomatoes, pumpkin or zucchini for the veg. You can substitute tofu for pork if you are feeding vegetarians, or just omit pork and skewer assorted veg).


    List of Ingredients


    • 24 diced pork pieces (leg, loin or fillet cut into 2cmx2cm)
    • 1/2 tsp barbecue seasoning, sprinkle or marinade (thai, moroccan or bush is good)
    • 24 pieces diced red onion, pineapple, red and green capsicum
    • 1 cup dipping sauce (eg satay, sweet chilli, spicy plum)


    Instructions


    1. Brush prok with a little oil, sprinkle with seasoning and set aside for 15 minutes.
    2. Skewer pork and vegetables (note- if using bamboo skewers soak them overnight in cold water first)
    3. Brush vegetables with oil, before or during cooking. Heat barbecue plate, grill on non-stick pan.
    4. When very hot add skewers and cook 5-6 minutes or until medium done and pork juices run just pink to clear.
    5. Turn occaisionally during cooking (best not to do it too much). Rest for a few minutes in a warm place on the barbecue. Avoiud overcooking.
    6. Serve with your favourite dipping sauce.
