Barbecue Pork with Red Onion Relish

could be good with bread, mashed potato, a crisp garden salad or sauerkraut. very big robust meal
List of Ingredients
- 4-8 quick cook pork chops
- 4-8 streaky bacon rashers
- 4-8 gourmet pork sausages (eg pork, fennel and chilli)
- 2 tbs olive oil
- 2 red onions, sliced
- 1/2 tbs brown sugar
- 1 tbs balsamic/red wine vinegar
- salt and pepper to taste
Instructions
- Heat pan until hot and add olive oil. Saute onions until golden brown and season with sugar, vinegar, salt and pepper.
- Taste for a good balance of sweet and sour. Adjust. Keep warm.
- Heat barbecue or pan until hot. Cook sausages and bacon. Turn occasionally during cooking. Cook chops until medium done and the juices are just pink to clear.
- Rest for a few minutes in a warm place before serving.
Final Comments
This relish would also be very good on hot dogs, or with other meats (eg kangaroo)
Mustard can be a good accompaniment to this dish and wouldn't clash with the relish
