    Barbecue Pork with Red Onion Relish

    could be good with bread, mashed potato, a crisp garden salad or sauerkraut. very big robust meal


    List of Ingredients


    • 4-8 quick cook pork chops
    • 4-8 streaky bacon rashers
    • 4-8 gourmet pork sausages (eg pork, fennel and chilli)
    • 2 tbs olive oil
    • 2 red onions, sliced
    • 1/2 tbs brown sugar
    • 1 tbs balsamic/red wine vinegar
    • salt and pepper to taste


    Instructions


    1. Heat pan until hot and add olive oil. Saute onions until golden brown and season with sugar, vinegar, salt and pepper.
    2. Taste for a good balance of sweet and sour. Adjust. Keep warm.
    3. Heat barbecue or pan until hot. Cook sausages and bacon. Turn occasionally during cooking. Cook chops until medium done and the juices are just pink to clear.
    4. Rest for a few minutes in a warm place before serving.


    Final Comments


    This relish would also be very good on hot dogs, or with other meats (eg kangaroo)

    Mustard can be a good accompaniment to this dish and wouldn't clash with the relish
