    Creole Chicken with Tomato Salsa

    serves 6. Use a different salsa if you don't like tomatoes (I have some fruity salsa recipes in my salads section that shoudl work). You could try to do this one with tofu instead or mushrooms. I have not tried it to say if it works though


    List of Ingredients


    • 125g butter
    • 1 tsp pepper
    • 1/2 tsp cayenne pepper
    • 1 tbs ground thyme
    • 1/4 tsp salt
    • 1/4 cup lemon juice
    • 2 tomatoes, diced
    • french dressing to taste
    • 1/2 cucumber, seeded and diced
    • 2 spring onions, chopped
    • 6 chicken fillet portions (eg 3 double breasts halved)
    • nasturtium leaves to serve (or baby spinach or lettuce)


    Instructions


    1. Melt butter. Whisk in peppers, sage, salt and lemon juice. Allow to cool and thicken.
    2. Combine tomato, cucumber and spring onions and moisten with French dressing. Allow to stand until required.
    3. Spread each fillet with the creole butter (lemony spiced butter) and panfry, barbecue or chargrill until cooked through. Serve with salsa on a bed of nasturtium leaves.
