if there is leftover lamb, wraps can be made up with cold lamb for lunchboxes the next day (or sandwiches if you have had enough wraps) The salad of course can be varied according to your preference (eg hommous, sprouts and cucumber instead of peanut butter and salad...or tabouli and a chermoula dip could be used)
List of Ingredients
- 1 tsp ground cumin
- 1 tsp ground coriander
- 4 lamb topside or round steaks
- 1 large carrot, grated
- 2 tbs chopped fresh coriander
- peanut butter
- 4 flat lebanese bread
- shredded lettuce
Instructions
- Combine spices and sprinkle over lamb.
- Preheat barbeque on high. Cook lamb steaks until well browned (about 2-3 minutes each side). Remove (rest) and slic thinkly.
- Combine carrot with fresh coriander.
- Spread wach bread with peanut butter. Top with sliced lamb, carrot and shredded lettuce. Roll up tightly.
- Cut each roll hal diagonally to serve.
