    List of Ingredients


    • 1/3 cup olive oil
    • 750g button mushrooms, thinly sliced
    • 3 garlic cloves, crushed
    • 2 cups breadcrumbs
    • 1 egg
    • 4 shallots, thinly sliced
    • 1 tsp ground cumin
    • small loaf turkish bread cut into squares
    • salad or rocket leaves
    • whole egg mayonnaise (homemeade is always best)


    Instructions


    1. Heat 2 tbs oil in lge frypan over medium heat.
    2. Add mushrooms, shallots, garlic and cumin. Cook 2-3 minutes or until mushrooms are soft.
    3. Increase heat to medium high and cook 10-12 minutes so that moisture evaporates.
    4. Puree half of mushroom mix until smooth.
    5. Transfer to a large bowl, mixing in remaining mushrooms, breadcrumbs and egg. Mix well.
    6. Shape evenly into 4 patties. Heat remaining oil in a large non-stick frypan over med-high heat.
    7. Add patties and cook 4-5 minutes each side or until golden.
    8. Preheat grill on high. Split turkish bread in half lengthways and toast until golden.
    9. Place mayonnaise, salad and mushroom patties on bread and serve immediately.


    Final Comments


    Obviously if you don't feel like mayonnaise use tomato sauce or mango chutney or anything that appeals to you...
