    Peach Salsa

    Recipe Introduction


    This is a delicious addition to any barbecue. This salsa can be served over grilled or barbecued steak, chicken (plain or marinated) with sausages, chickpea patties, corn fritters, prawns or anything like that. It is good with tandoori marinade, soy and honey, wine based marinades or with quesadillas too!!

    List of Ingredients




    1 tin peaches, cut into bite sized pieces
    1/2 - 1 red onion, finely diced
    red chilli to taste (deseeded best)
    chopped coriander (cilantro)
    lime juice

    Recipe



    1. Combine all ingredients and serve with your barbecued meat or vegetarian treat

    A variation I have tried is using one or more fresh mangoes instead of the tin of peaches. They need to be cut into chunks. I imagine pineapple or sweet corn would be acceptable alternatives too
