Recipe Introduction
Head for the park and barbecue this simple lunch while the children play.
List of Ingredients
- Lettuce (butter or iceberg)
- Tomato (I omit them if someone is allergic)
- Cucumber
- Carrot (optional)
- Snowpea sprouts (optional)
- Coriander/ Spring onion (optional)
- chicken tenderloins
- 500g yoghurt
- bottled mint sauce
Instructions
- Mix a bit of the yoghurt with tandoori paste and marinate chicken 20-30 minutes.
- Grill/fry/bbq the chicken.
- Mix mint sauce to taste with the remaining yoghurt. The bright green sauce looks best but either tastes good.
- Toss salad ingredients together in a bowl and drizzle over dressing, serving with warm naan breads or build salad on Vietnamese rolls, baguettes or wraps.
Final Comments
I think fish would be an OK substitute for chicken.
