    serves 4. I have used the same recipe with kangaroo steaks and also with large pieces of tofu (vegetarian) so there is a lot of room for variety.


    List of Ingredients


    • 12 frenched lamb cutlets
    • 1 tsp chopped chilli
    • 1/3 cup crunchy peanut butter
    • 2 tsp crushed garlic
    • 1 tsp chopped ginger
    • 1 tsp fish sauce
    • 2 tsp brown sugar
    • 1/3 cup lime juice


    Instructions


    1. Combine all ingredients except lamb and stir to combine. Marinate the lamb cutlets 30 min or overnight in fridge.
    2. Heat grill or barbecue on high. Cook 5 mins each side until edges char. Stand 2-3 min and serve with steamed jasmine rice and salad
    3. Garnish with fresh lime and chopped chilli
