Avocado toast with Bocconcini and Basil

100s of variations are possible. Beans or corn work for the vegetarian palate. Smoked salmon is good.

List of Ingredients
- 4 slices bread, toasted
- juice of 1 lemon
- 2 avocadoes- peeled, seeded and sliced
- 6 bocconcini "cherries" - drained and sliced
- 100g shaved ham
- 1 cup basil leaves
- 1/2 bunch spring onion, sliced finely
- 6 roma tomatoes, sliced (a tomato hating friend of mine prefers capsicum)
- tabasco sauce
- cracked black pepper
Instructions
- Arrange avocado slices on the toast then sprinkle with lemon juice and a little tabasco sauce.
- Dust with pepper and scatter with spring onions. Arrange ham and tomato slices on top.
- Set half of basil aside. Using scissors shred remaining basil roughly and scatter over tomatoes.
- Top with remaining avocado and tomato slices. Arrange bocconcini cheese on top and cook under a hot grill for about 10 mins or until cheese has melted and started to bubble.
- Serve at once scattered with whole basil leaves and dusted with pepper.
