    List of Ingredients


    • 3/4 cup milk
    • 3/4 cup water + more water later
    • 15g fresh yeast
    • 1 tbs castor sugar + 1 tbs later
    • 3 cups "strong" flour (bread flour) can use plain flour with added gluten/bread improver
    • 1 tsp cinnamon powder
    • 1 pinch salt
    • 1 egg yolk


    Instructions


    1. Bring milk to the boil. As soon as it boils tip it into 3/4 cup water (in a bowl obviously). The result should be lukewarm. Make sure it is then add the yeast.
    2. Add 1 tbs castor sugar and mix through until it froths.
    3. In a seperate bowl measure out the flour (and improver if needed) and sift with the salt and cinnamon. Make a well in the centre.
    4. Add yeast liquid with the other half sugar. Stir. Add more tepid water if needed. Tip out dough, hopefully it will be at a bread dough consistency.
    5. Knead on a floured surface with floured hands. after 15-20 minutes of kneading (yep that long, but possibly it would be ok to use a machine) it should be smooth and elastic. Place in a lightly greased bowl to rise.
    6. Take a handful of douch and pierce a hole in it. Make the hole quite large as it will shrink as the bread rises. Place bagels on a tray and let them rise for 20-30 minutes (what a good excuse to read your book).
    7. Boil water on the stove. Pop in the bagels (after water is boiling) and give them 1 minute per side.
    8. Place on an oven tray and brush with beaten egg yolk. Bake in a preheated oven for about 20 minutes.


    Final Comments


    Serve with fruit cheese (or butter, salads, pate, egg, herring, etc)
