Banana Pecan Bread

Vary the fruit and nuts as desired, or mix in a small amount of berries at the last minute.
List of Ingredients
- 2 1/2 cups plain flour
- 1 1/2 cups dessicated coconut
- 2 bananas chopped into chunks + 1 banana sliced (for decoration)
- 300ml milk
- 2 tsp baking powder
- 1/2 cup chopped pecans + 1/2 cup whole pecans for decoration
- 60g melted butter
- 1/2 cup caster sugar
- 2 eggs, lightly beaten
Instructions
- Preheat oven to 180C. Grease 21cm x 11cm loaf tin.
- Combine sifted flour and baking powder into a large bowl, adding caster sugar, pecans, coconut and stirring.
- Combine remaining ingredients in a seperate bowl and fold in the dry ingredients a little at a time until the mixture is smooth.
- Pour into prepared tin and decorate top with sliced banana and whole pecans.
- Bake for 1 hour and 15 minutes. Test with skewer.
- Allow to cool in the tin 10 minutes before turning onto a wire rack to cool completely.
- Serve with butter, or toast and then serve with butter and honey.
