Banana Soy Loaf

List of Ingredients
- 3/4 cup lightly steamed soy flour
- 1/2 tsp bicarb of soda
- 1/2 cup rice bran
- 1 cup milk (or soy milk)
- 1 medium banana mashed
- 1/3 cup cornflour
- 1/2 tsp cream tartar
- 2 eggs, beaten
- 2 tbs honey
Instructions
- Sift together flours, bicarb of soda and cream of tartar
- Combine with other dry ingredients.
- Mix together eggs, milk, bananas and honey. Add to dry ingredients. Beat briskly 30-60 min so banana evenly distributed through a smooth mixture.
- Pour into lightle greased 21 x 11 cm loaf tin. Bake in preheated oven at 180C for 30 mins until brown and top springs back when lightly touched.
- Remove from oven and leave to cool 15-20 minutes before turning out onto wire rack.
- Serve warm or cold with butter.
