    List of Ingredients


    • 3/4 cup lightly steamed soy flour
    • 1/2 tsp bicarb of soda
    • 1/2 cup rice bran
    • 1 cup milk (or soy milk)
    • 1 medium banana mashed
    • 1/3 cup cornflour
    • 1/2 tsp cream tartar
    • 2 eggs, beaten
    • 2 tbs honey


    Instructions


    1. Sift together flours, bicarb of soda and cream of tartar
    2. Combine with other dry ingredients.
    3. Mix together eggs, milk, bananas and honey. Add to dry ingredients. Beat briskly 30-60 min so banana evenly distributed through a smooth mixture.
    4. Pour into lightle greased 21 x 11 cm loaf tin. Bake in preheated oven at 180C for 30 mins until brown and top springs back when lightly touched.
    5. Remove from oven and leave to cool 15-20 minutes before turning out onto wire rack.
    6. Serve warm or cold with butter.
