Recipe Introduction
Use any spicy herb or spice instead of mountain pepper if you like
List of Ingredients
- 250g (1 1/2 cups) wholegrain freekeh
- 1 litre boiling water
- 2 tsp ground native pepper leaf
- 1kg self raising flour
- 2 tsp sugar
- 50ml olive oil
- 375ml beer
- 1 cup bran
- 2 tsp salt
Instructions
- Pour boiling water over freekeh and allow to stand overnight. Drain reserving 350ml of the water
- Put grains, flour, oil, pepperleaf, salt, sugar and beer in a large bowl. Add most of the water.
- Mix dough together adding more water or flour as needed.
- Work it into a rough, sticky, moist dough (avoid overworking)
- Scrape onto a floured bench, dust hands with flour and knead for 4-5 minutesd to get a smooth consistency.
- Divide in 2
- Oil 2 log moulds with extra oil and coat with bran. Roll dough to shape of moulds, place in, brush with water and sprinkle heavily with bran.
- Cut slits in the top with a knife. Bake 180C for 45 mins.
