    Heartn Smart Bruschetta with Avocado

    This is an ideal breakfast or lunch. It has everything you need. See below for variations.


    List of Ingredients


    • 2-3 slices bread (depending on size of loaf)
    • 1/4 red onion, finely chopped
    • 1 tbs lemon juice
    • 2 tbs extra virgin olive oil
    • 1/2 red chilli, seeds removed and chopped finely (optional)
    • pinch salt
    • pinch sugar (can omit)
    • a good grinding of pepper
    • 5-6 cherry tomatoes
    • 1 ripe avocado


    Instructions


    1. Mix lemon juice with oil and season with salt, pepper and sugar. Add in chili and onion.
    2. Finely chop or mash avocado into onion mix.
    3. Meanwhile toast bread (or grill it)
    4. Halve cherry tomatoes and mix into avocado mix. Heap onto slices of bread and enjoy. A glass of juice and an expresso round off the perfect healthy breakfast.


    Final Comments


    -if you want even less fat reduce or omit oil
    -low fat yoghurt or sour cream can be used instead of dressing (ie oil, lemon and sugar)
    -fresh garlic or herbs are nice in the avocado mix if you feel like it
    -for a salsa to serve over grilled meat just use the avocado mix as is, or add mango or green apple to it.
