    serves 10. Calcium rich


    List of Ingredients


    • 2 cups self raising flour
    • 1/2 salt
    • 1/2 cup sultanas
    • 2 cups buttermilk
    • 1 cup wholemeal self raising flour
    • 2 tsp bicarbonate of soda
    • 3/4 cup chopped dried apricots
    • 2 tbs skim milk powder
    • 2 tsp castor sugar
    • 2 tbs chopped almonds + extra for sprinkling


    Instructions


    1. Combine dry ingredients
    2. Mix in buttermilk to form a stiff batter. Pour into 27 x 8cm buttered loaf tin.
    3. Bake at 180C for 50 minutes. Turn out on a wire rack.

    Delicious fresh or toasted with butter
