    makes about 1 dozen


    List of Ingredients


    • 1 cup mashed white fleshed potato
    • 90g butter
    • 1 cup sultanas
    • 1/2 cup sugar
    • 2 eggs
    • 3/4 cup milk
    • 2 cups self raising flour


    Instructions


    1. Sieve the potato, add butter and sugar, eggs and milk and beat well.
    2. Mix in sultanas and flour.
    3. Turn dough onto floured surface and knead it lightly. Roll out and cut into rounds.
    4. Place scones onto buttered tray, brush tops with milk and bake 220C for 10-15 mins
