    Tomato, Basil and Cheese Scones

    Recipe Introduction


    As with all scones the key is don't overwork. Someone told me in America they call scones something different. Biscuits I think. And then biscuits get called cookies. Confusing!


    List of Ingredients


    • 4 cups self raising flour
    • 4 spring onions (sliced finely)
    • 1 1/2 cups grated mozzarella (or stronger flavoured cheese if you like)
    • 1/4 cup semidried tomatoes, chopped
    • 1 cup good cream
    • 300ml tomato juice
    • 5 basil leaves (chopped finely)


    Instructions


    1. Sift flour thoroughly. Add in spring onions, basil, cheese and tomatoes and toss to cover.
    2. Work cream and juice in without overworking. Shape into quarters of a rough circle or disk shapes and bake.
