Tomato, Basil and Cheese Scones

Recipe Introduction
As with all scones the key is don't overwork. Someone told me in America they call scones something different. Biscuits I think. And then biscuits get called cookies. Confusing!
List of Ingredients
- 4 cups self raising flour
- 4 spring onions (sliced finely)
- 1 1/2 cups grated mozzarella (or stronger flavoured cheese if you like)
- 1/4 cup semidried tomatoes, chopped
- 1 cup good cream
- 300ml tomato juice
- 5 basil leaves (chopped finely)
Instructions
- Sift flour thoroughly. Add in spring onions, basil, cheese and tomatoes and toss to cover.
- Work cream and juice in without overworking. Shape into quarters of a rough circle or disk shapes and bake.
