Banana Pancakes with Whipped Butter

This is a weekend breakfast or a friends over for brunch. The banana makes it a real health food (tell yourself that)
List of Ingredients
- 1 cup plain flour
- 2 eggs
- 1 cup milk
- 225g butter
- 1 cup icing sugar
- 4-5 bananas (sliced)
- maple syrup (or honey)
Instructions
- In a large bowl mix flour and eggs to a smooth batter. Gradually add milk and stir until smooth.
- Heat a heavy based frypan or crepe pan and melt 1/2 tsp butter, swirling. Add 1/4 cup batter and swirl to spread evenly. Cook on medium heat until bubbles appear.
- Flip. Cook 1 more minute. Set aside. Repeat with remaining batter.
- Meanwhile beat remaining 200g butter with icing sugar until pale and thick. Refrigerate until needed to serve.
- When pancakes cooked, serve each one spread with whipped butter, topped with banana slices and drizzled with maple syrup.
Final Comments
A small amount of orange zest can also be beaten into the butter. I would make the butter ahead
