Recipe Introduction
I read a version of this in a magazine with blueberries and macadamia nuts. That was delicious but who can affore blueberries or macadamia nuts more than about once a year? So I developed a more child-friendly, inexpensive version.
serves 2-3, double to make more
List of Ingredients
- 3 bananas, mashed
- 2 eggs
- 1 cup yoghurt (plain or blueberry)
- 2 tbsp honey or brown sugar (to taste)
- pinch salt
- 50g walnut crumbs
- 1 cup wholemeal self-raising flour
Instructions
- Mash bananas with fork. finely mashed or chunky is fine depending on your inclination.
- Mix in honey, then eggs and yoghurt.
- Mix in nuts. Add salt and gradually stir in flour to yield a very thick mixture.
- Heat oil or butter in pan. Fry 1-2tbs dollops of mixture flipping after a couple of minutes.
- Serve with maple syrup, extra yoghurt or fresh fruit if desired but I have them plain

-grated apple and almond
-chopped strawberry and hazelnut (maybe consider white flour for this more delicate combination)
