    Recipe Introduction


    serves 4, halve for a romantic brekkie for two or serve as a brunch/lunch/supper


    List of Ingredients


    • 1/4 cup white wine vinegar
    • 4 large eggs
    • 1 tbs olive oil
    • 150g baby spinach
    • 2 english muffins
    • 225g smokes salmon slices (or bits)


    Instructions


    1. Bring a large frypan of water to a simmer over medium heat. Stir in vinegar
    2. crack egg into coffee cup or small bowl. Gently transfer egg into the simmering water.
    3. Repeat with 3 more eggs and cook for about 3 minutes or until the whites are set but the yolks are still runny. Using a slotted spoon, carefully remove eggs from the water and set them on a paper towel or piece of dry bread to drain excess water.
    4. Meanwhile place english muffins in toaster. Add oil to large frypan over high heat. Add spinach and cook for 2 minutes or until just wilted. Season to taste with salt and pepper.
    5. Set half a muffin on each plate. Divide spinach between muffins. Divide salmon evenly over spinach. Place one egg on each and serve immediately.


    Final Comments


    garnish with frsh dill if you have some. Freshly squeezed juice and brewed coffee finish off a halthy breakfast without much fat
