    Recipe Introduction


    Even though this is a breakfast recipe I have a crazy six year old who likes it for dinner.

    This is the serves 2 version. Adapt for as many as you like.


    List of Ingredients


    • 1 cup rolled oats
    • 1/2 -3/4 cup apple juice
    • 1/4 cup slivered almonds (more or less as you like)
    • a handful of sultanas (optional)
    • honey to taste (optional, I only use it because my kid is a sweet tooth)
    • 1 apple (grated, thinly sliced or chopped) (pear might work if you prefer it)
    • fresh or tinned fruit as desired
    • unsweetened yoghurt to taste


    Instructions


    1. Soak oats in apple juice (and honey)at least 2 hours or overnight. Use enough juice for all oats to be touching liquid when mixed well. but no more than that.
    2. Mix sultanas and almonds through soaked oats. You may drain them if needed.
    3. Place cut up apples in the bottom of 2 bowls (about half an apple each)
    4. Cover with a generous serve of the oat mixture.
    5. Dollop on yoghurt as needed
    6. Finish with fresh or tinned fruit as you like.
    7. An alternative is to mix all ingredients together and serve that way.


    Final Comments


    Use any fruit you like, I find fresh raspberries or blueberries, tinned peaches or chopped strawberries work well. Probably banana would be ok or anything you want.

    If you don't like yoghurt use cream (unless you are watching your weight). You may also substitute brown sugar for honey.

    For a less sweet alternative use milk instead of apple juice. Add spices, dried fruit or nuts as needed.

    For super healthy types add LSA.
