List of Ingredients
- 2 eggs
- milk
- salt
- pepper
- 1-2 spring onions, sliced
- 6 small mushrooms
- a handful pieces chopped capsicum (small handful)
- 2 slices smoked salmon (in small pieces)
- mustard powder
Instructions
- Beat eggs with a bit of milk, salt pepper and mustard
- Heat butter in pan and fry capsicum and mushrooms until tender (adding more pepper if desired)
- Toss in the spring onion and pour over egg mix. Allow to cook for a few minutes, letting it set.
- add smoked salmon to the top just before it sets.
- Serve with wholemeal or rye toast a glass of juice and good coffee.
Final Comments
This can come out as a sort of scrambled eggs if you toss it in the pan and it still tastes great.
Dad sometimes makes it with bacon (which he fries with the mushrooms) instead of salmon.
